The excess whipped cream will be squeezed to the outside of the cake, as shown. 17. Then smooth the outside of the cake. Place the spatula about 1/2 the thickness of the cake from the top down (the position of the spatula in the picture). Again, turn the table while shaking the spatula from side to side with your wrist. 18. After smoothing the top half of the side, slowly lower the spatula.
